Resumo: In order to improve the quality and shelf-life of lipid foodstuffs it is very important to inhibit the lipid oxidation process using antioxidant (AO) agents. In the last few years, food industry has been using synthetic antioxidants as food additives. Nevertheless, the recent world-wide tendency is to decrease the use food additives and to substitute synthetic AO by natural origin AO. Nowadays, alternatives to traditional food packaging are being studied and active food packaging with antioxidant properties seems to be the most promising to extend the shelf life of foodstuffs. In the present project we aim to develop and characterize a new active packaging with antioxidant properties due to the inclusion of tocopherol.
